Individual chapters in this book provide different perspectives on the nutrition problems in the United States: what are the economic costs associated with unhealthy eating patterns; how do dietary patterns compare with dietary recommendations; how do national income and prices, advertising, health claims, and trends in eating away from home affect nutrient intake; how much do people know about nutrition and how does nutrition knowledge and attitudes affect intake of fats and cholesterol; how do different government programs and regulations influence food expenditures and consumption; what are some public and private efforts to improve healthy eating; and what are potential impacts of healthier eating on domestic agriculture.

Modelling the likely impact of healthy eating guidelines on agriculture in England and Wales AgEcon

Household food consumption data is used to estimate likely changes in diet under healthy eating guidelines, and the consequences this would have on the agricultural sector in England and Wales. The first step entails imposing nutrient restrictions on food consumption following dietary recommendations. The resulting diet is then used as a proxy for demand in agricultural commodities, to test the impact of such a scenario on agricultural land use and production. Results of the diet optimisation indicate a severe drop in foods rich in saturated fats and sugar, essentially cheese and sugar-based products, along with lesser cuts in fat and meat products Conversely, consumption of fruit & vegetables, cereals, and flour would increase to meet dietary fibre...

Rice Consumption in the United States: New Evidence from Food Consumption Surveys AgEcon

Evidence from recent U.S. food consumption surveys provides new information on the distribution of rice consumption, the characteristics of rice consumers, and the diets of people who consume rice. Recently available data from nationally representative surveys of food consumed by individuals in the United States allowed comparison of consumption today (2001-02) with consumption in the mid-1990s. Data come from the Continuing Survey of Food Intakes by Individuals (1994-96) and the National Health and Nutrition Examination Survey (2001-02). Rice is consumed by a significant portion of the U.S. adult population. In 2001-02, over 18 percent (18.2 percent) of adults reported eating at least half a serving of white or brown rice in one day of observed intake....

The U.S. Grain Consumption Landscape: Who Eats Grain, in What Form, Where, and How Much? AgEcon

The U.S. Government is promoting whole-grain foods, responding to mounting evidence of their association with maintaining a healthy weight and reducing the risk of heart problems and other diseases. This study compared Americans’ consumption of grains with the recommendations in the Government’s 2005 Dietary Guidelines, using data from USDA’s Continuing Survey of Food Intakes by Individuals, 1994-96 and 1998. The analysis confirmed a national preference for refined grains—only 7 percent of survey respondents met the 2005 whole-grain recommendation.
